Ouma Bettie’s Pancake Recipe: Because every rainy day needs some comfort food

Gluten and sugar are probably not the most healthy options to choose from, but what is life without a little bit of comfort food. And on a rainy day, there is absolutely nothing better than a homemade pancake to chomp on.

This recipe has been in my in-law’s family for generations and has outdone many similar recipes. I have even sent my kids on Rotary Youth Exchange, armed with this perfect South African recipe.

The best part is that it is super easy to put together. The baking part takes some time, but that is where you create magic family-time moments. In my house, most of the pancakes are finished before I have finished baking. Sounds like an oxymoron? Probably!

Before I forget ….. the very best part is that this recipe is super cheap to make!

Foolproof Pancake Recipe

Pancake Ingredients

3 Cups of Flour

1 Teaspoon Salt (You can use less if preferred)

1 Teaspoon Baking Powder

4 Large Eggs

5 Cups of Water

125 ml Oil


Beat everything except the oil together. Preferably with an electric beater.

Once it is smooth and has a nice runny consistency, leave it to rest for approximately 30 minutes.

Add the oil and mix well together.

Heat one or two pans until it is nice and hot. Cover with a little bit of oil or Spray-and-Cook.

Depending on the size of your pan, you can use +-1/4 cup of the mixture at a time to bake your pancake.

You should roll the pan in a circular motion until the entire pan is covered with the mixture.

Once it starts to bubble and pulls away from the edges of the pan, you can flip your pancake.

Once done, throw out onto a plate. Cover with a little bit of premixed cinnamon sugar.

Roll up.

Add a bit of freshly squeezed lemon juice for extra flavor.
